  • sugar - 1/2 c
  • eggs - 2 item
  • salt - 1 tsp
  • flour
  • oil - 1/3 c
  • baking powder
  • baking soda - 1/2 tsp
  • chopped walnuts - 1/2 c
  • skim milk - 1/2 c
  • grated lemon peel - 1/2 tsp
  • shredded zucchini - 1 c
  • connamon - 1/2 tsp

How to make zucchini lemon bread:

Grease and flour loaf pan. Heat oven to 350°F.

Combine first 5 ingredients. Stir in lemon peel, cinnamon, zucchini, walnuts, oil, milk, and eggs. Mix well. Pour in prepared pan.

Bake 1 hour and 15 minutes or until a toothpick inserted in center comes out clean.
