Zucchini latkes



  • eggs - 2 item
  • flour - 1/2 c
  • salt and pepper according to taste - 1 item
  • to 8 small firm zucchini, grated into a bowl - 6 item
  • small onion, chopped into bowl - 1 item
  • to 2 grated carrots optional - 1 item
  • hot pepper paste optional - 1/2 tsp
  • milk if too stiff - 1 item
  • flour if too soupy - 1 item

How to make zucchini latkes:

Mix together zucchini, onion and carrot. Mix in eggs, 1/2 cup flour, hot pepper paste, salt and pepper. Add milk if too stiff or flour if too soupy. Fry in oil. Press spoonfuls down to flatten. Fry until golden brown, turning once. Serve immediately with your choice of applesauce, sour cream, jam, etc.
