Ingredients/Components

  • salt - 1 tsp
  • garlic powder - 1/4 tsp
  • chopped onions - 1/4 c
  • dash of pepper - 1 item
  • grated cheese - 1 c
  • hamburger - 1 lb
  • tomato sauce - 4 c
  • medium zucchini, sliced - 3 item
  • imitation sour cream - 8 oz
  • can black olives - 1 1/2
  • lo-cal cottage cheese - 8 oz

How to make zucchini lasagna:

Simmer tomato sauce with seasonings; in separate frying pan, saute hamburger and onions until meat is brown. Add tomato sauce and simmer for 15 minutes. Line bottom of 9 x 13-inch baking pan with half the zucchini slices. Cover with half of meat mixture. Spoon on half of sour cream and cottage cheese. Sprinkle with olives. Repeat layering process with remaining half portion. Top with grated cheese. Cover with foil and bake at 350° for 35 minutes; remove foil (save) and bake for 10 minutes more to brown cheese. Remove from oven, re-cover with foil and allow to stand for 15 minutes until layers are set. Makes 12 servings.
