Zucchini lasagna



Ingredients/Components
- salt - 1/2 tsp
- flour - 2 Tbsp
- egg - 1 item
- pepper - 1/8 tsp
- chopped onion - 1/3 c
- can tomato sauce - 1 oz
- ground beef - 1/2 lb
- cottage cheese - 1 c
- oregano - 1/2 tsp
- basil - 1/4 tsp
- shredded Mozzarella cheese - 1/2 c
- medium zucchini - 4 item
How to make zucchini lasagna:
About 1 1/2 hours before serving, preheat oven to 375°. In a 10-inch skillet saute beef and onion until onion is tender, about 10 minutes.Meanwhile, slice zucchini lengthwise into 1/4-inch thick slices. In a small bowl, combine cottage cheese and egg, mixing well. In bottom of baking dish, put 1/2 of the zucchini in layer, sprinkling with 1 tablespoon flour, then put part of meat mixture. Top with cottage cheese mixture. Repeat with remaining zucchini and flour. Sprinkle with Mozzarella cheese and then remaining meat mixture. Bake, uncovered, 40 minutes or until hot and bubbly. Let stand 10 minutes for easier cutting.
