Ingredients/Components

  • eggs - 4 item
  • clove garlic, minced - 1 item
  • pepper to taste - 1 item
  • olive oil - 1 item
  • salt to taste - 1 item
  • green onions, finely chopped - 6 item
  • grated Romano or Parmesan cheese - 1/4 c
  • sprigs parsley, finely chopped - 6 item
  • slices bread in crumbs - 2 item
  • zucchini, cut in 1/4 inch slices

How to make zucchini fritters:

Boil zucchini 10 to 15 minutes; drain. Mix zucchini, onions, parsley, cheese, garlic, salt, pepper, bread crumbs and eggs. Heat 1/2 inch olive oil in skillet. Drop zucchini mixture by large spoonfuls into oil; cook until browned on both sides. Drain. Yields 6 to 8 fritters.
