Zucchini fritters
Ingredients/Components
- eggs - 4 item
- clove garlic, minced - 1 item
- pepper to taste - 1 item
- olive oil - 1 item
- salt to taste - 1 item
- green onions, finely chopped - 6 item
- grated Romano or Parmesan cheese - 1/4 c
- sprigs parsley, finely chopped - 6 item
- slices bread in crumbs - 2 item
- zucchini, cut in 1/4 inch slices
How to make zucchini fritters:
Boil zucchini 10 to 15 minutes; drain. Mix zucchini, onions, parsley, cheese, garlic, salt, pepper, bread crumbs and eggs. Heat 1/2 inch olive oil in skillet. Drop zucchini mixture by large spoonfuls into oil; cook until browned on both sides. Drain. Yields 6 to 8 fritters.Recipe categories: Squash, Appetizers, Vegetables.
