Zucchini crisp
Ingredients/Components
- sugar - 2 c
- cinnamon - 1/4 tsp
- salt - 1/2 tsp
- flour
- lemon juice - 1 item
- softened oleo
- zucchini - 1 item
How to make zucchini crisp:
Crust Mixture:4 c. flour1 1/2 c. softened oleo1/2 tsp. salt2 c. sugar Combine crust; pat 1/2 of mixture in bottom of 9 x 13-inch pan. Bake 10 minutes at 350°.Cook 6 to 8 cups peeled zucchini (seeded and sliced like apples) in 2/3 cup lemon juice until tender. When tender, add 3/4 cup sugar and 1/4 teaspoon cinnamon; simmer a few minutes. Take off heat. Add 1/2 of remaining crust mixture; stir well until thickens. Let cool. Pour over crust. Mix 1 tablespoon cinnamon to remaining crust mixture and sprinkle on top of filling. Bake at 350° for 30 minutes.
