  • sugar - 2 Tbsp
  • salt - 1 tsp
  • flour - 1 c
  • baking powder - 1 Tbsp
  • large egg - 1 item
  • butter, melted - 1/4 c
  • skim milk - 1 c
  • can whole kernel corn, drained - 1 item
  • yellow cornmeal
  • medium zucchini, shredded - 1 item
  • ground red pepper optional - 1/4 tsp

How to make zucchini corn muffins:

Grease 12-cup muffin pan; set aside. In small bowl, combine butter, egg and milk. In medium bowl, stir yellow cornmeal, flour, baking powder, salt and pepper. Add egg mixture, zucchini and corn, stirring until just combined. Spoon batter into muffin pan. Bake at 350° for 20 to 23 minutes or golden brown.
