- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 2 tsp
- salt - 1 tsp
- flour - 3 c
- coconut - 1/2 c
- oil - 1 c
- soda - 1 tsp
- baking powder - 1 tsp
- unpeeled grated zucchini - 3 c
How to make zucchini coconut bread:
Cream eggs and sugar. Add oil, then mix other ingredients. Pour into 2 greased and floured loaf pans. Bake at 325° for 1 1/2 hours until brown and toothpick comes out dry.Recipe categories: Breads, Breakfast, Quick breads.
