  • vanilla - 2 tsp
  • salt - 1 tsp
  • flour - 3 c
  • coconut - 1 c
  • oil - 1 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • grated zucchini, peeled and no seeds - 3 c

How to make zucchini coconut bread:

Mix in order given. Place in 2 large greased pans. Bake at 375° for 1 hour or until center is done. Frozen shredded zucchini can be used when thawed and drained a little.
