Ingredients/Components
- eggs - 2 item
- salt - 1/2 tsp
- vegetable oil - 1 item
- grated zucchini - 2 c
- finely chopped onion - 3 Tbsp
- seasoned bread crumbs - 1/2 c
- slices Swiss cheese, grated - 3 item
How to make zucchini cheese muffins:
Combine all ingredients except vegetable oil. Stir until well blended. Heat 1 teaspoon vegetable oil in each muffin cup. Spoon batter into each cup. Bake at 375° for 20 minutes or until golden brown and puffed. Makes 12.Recipe categories: Breads, Breakfast, Rolls/biscuits.
