Zucchini casserole
Ingredients/Components
- pepper - 2 tsp
- oregano - 2 Tbsp
- basil - 1 Tbsp
- olive oil - 1 Tbsp
- large onion, sliced - 1 item
- large can stewed tomatoes - 1 item
- uncooked
- medium zucchini, medium sliced - 2 item
- low-fat Polish sausage or kielbasa, sliced - 1 lb
How to make zucchini casserole:
Saute sliced zucchini and onion in olive oil for 5 minutes. Add remaining ingredients, except pasta. Cook on medium heat for 25 to 30 minutes or until zucchini is cooked. Stir in cooked pasta (pasta bows make this a pretty dish). Let flavors mix for at least 5 minutes. Serve hot. Serves 4.This recipe can be made one day ahead and reheated.
