Ingredients/Components
- oil - 1/2 c
- Bisquick - 1 c
- garlic powder - 1 clove
- chopped onion - 1/2 c
- Parmesan cheese - 1/2 c
- oregano - 1/2 tsp
- dash of salt and pepper - 1 item
- parsley - 2 Tbsp
- eggs, slightly beaten - 4 item
- zucchini, peeled and sliced - 3 c
How to make zucchini casserole:
Preheat oven to 350°. In a large bowl, mix together eggs and oil. Add onion and garlic. Add Bisquick, Parmesan cheese, parsley and oregano. Mix well with wooden spoon. Add zucchini; mix until moistened. Sprinkle in salt and pepper as desired. Pour into lightly greased 9 x 13-inch baking dish.
