Ingredients/Components
- shredded Cheddar cheese - 1/2 c
- sliced mushrooms - 1 lb
- large chopped onion - 1 item
- sausage
- chopped green and red peppers - 1/2 c
- small sliced zucchini - 4 item
- or 2 Jiffy cornbread mixes - 1 item
How to make zucchini casserole:
Brown sausage, onion and peppers. Drain. Saute mushrooms and zucchini. Spread all into a greased 9 x 13-inch pan.Prepare cornbread mix(es) according to directions; add Cheddar cheese. Spread over meat and veggies. Bake at 350° for 20 to 25 minutes or until top is completely baked.
