Ingredients/Components

  • shredded Cheddar cheese - 1/2 c
  • sliced mushrooms - 1 lb
  • large chopped onion - 1 item
  • sausage
  • chopped green and red peppers - 1/2 c
  • small sliced zucchini - 4 item
  • or 2 Jiffy cornbread mixes - 1 item

How to make zucchini casserole:

Brown sausage, onion and peppers. Drain. Saute mushrooms and zucchini. Spread all into a greased 9 x 13-inch pan.

Prepare cornbread mix(es) according to directions; add Cheddar cheese. Spread over meat and veggies. Bake at 350° for 20 to 25 minutes or until top is completely baked.
