  • sour cream - 1 c
  • can cream of chicken soup - 1 item
  • onion, chopped - 1 item
  • 1/2 sticks margarine - 1 item
  • Pepperidge Farm stuffing - 1 pkg
  • zucchini cut into 1-inch cubes - 6 c

How to make zucchini casserole:

Cook zucchini and onion in a small amount of oil until half cooked. Melt margarine and mix with stuffing mix. Mix sour cream and soup together. Add zucchini and onion. Layer casserole with 1/2 of stuffing mix. Place other ingredients on top. Top with other 1/2 of stuffing. Bake at 350° for 30 minutes.
