Ingredients/Components

  • pkg - 1 oz
  • sour cream - 1 c
  • salt - 1/2 tsp
  • shredded carrot - 1 c
  • can cream of mushroom soup - 1 item
  • large onion, chopped - 1 item
  • zucchini, sliced into 1-inch pieces - 6 c
  • margarine, melted, or butter - 1/2 c

How to make zucchini casserole:

Note: Other squash can be used also. Cook zucchini and onion in boiling salted water for 5 minutes; drain. Combine soup, sour cream and carrots. Fold in drained squash and onion. Combine melted margarine and stuffing mix. Spread half of stuffing
