  • sour cream - 1/2 c
  • margarine - 6 Tbsp
  • chopped onion - 1/2 c
  • cream of chicken soup - 1 c
  • medium zucchini, sliced 1/3-inch thick - 4 item
  • grated shredded carrots - 1 c
  • bread stuffing dressing

How to make zucchini casserole:

Boil zucchini in salted water until tender-crisp, about 5 minutes; drain. Melt 4 tablespoons margarine and saute onion until tender. Remove from heat and add soup and sour cream. Fold in 1 1/2 cups stuffing mix, then zucchini. Put in casserole; add rest of stuffing mix over top. Melt 2 tablespoons margarine; spread over top. Bake at 350° for 40 minutes.
