Ingredients/Components

  • 6 c - 2 lb
  • chopped onion - 1/4 c
  • can cream of mushroom soup - 1 item
  • sour cream - 1 c
  • shredded carrots - 1 c
  • pkg - 1 oz
  • melted butter - 1/2 c

How to make zucchini casserole:

Cook squash and onions in boiling water 5 minutes; drain. Combine soup, sour cream and carrots; fold in squash and onion. Combine stuffing with butter. Spread 1/2 of stuffing in bottom of 9 x 13-inch pan. Spoon zucchini mixture over that. Sprinkle remaining stuffing on top. Bake at 350° for 25 to 30 minutes.
