Ingredients/Components
- sour cream - 1 c
- oleo - 1/2 c
- chopped onion - 1/4 c
- can cream of chicken soup - 1 item
- cubed or chopped zucchini - 6 c
- shredded carrots, uncooked - 1 c
- box flavored stuffing mix - 1 oz
How to make zucchini casserole:
Cook onions and zucchini; drain. Combine soup and sour cream. Stir in carrots; fold in zucchini and onions. Combine stuffing mix and oleo and spread 1/2 of stuffing mix on bottom of 12 x 7 1/2 x 2-inch Pyrex dish. Spoon remaining stuffing over vegetables.
