Ingredients/Components

  • sour cream - 1 c
  • oleo - 1/2 c
  • chopped onion - 1/4 c
  • can cream of chicken soup - 1 item
  • cubed or chopped zucchini - 6 c
  • shredded carrots, uncooked - 1 c
  • box flavored stuffing mix - 1 oz

How to make zucchini casserole:

Cook onions and zucchini; drain. Combine soup and sour cream. Stir in carrots; fold in zucchini and onions. Combine stuffing mix and oleo and spread 1/2 of stuffing mix on bottom of 12 x 7 1/2 x 2-inch Pyrex dish. Spoon remaining stuffing over vegetables. Bake at 350° for 25 to 30 minutes.
