Zucchini casserole
Ingredients/Components
- salt - 1/2 tsp
- flour - 2 Tbsp
- egg - 1 item
- pepper - 1/2 tsp
- chopped onion - 1/3 c
- can tomato sauce - 1 oz
- carton cottage cheese - 1 oz
- medium zucchini - 4 item
- ground chuck - 1/2 lb
- garlic powder or minced garlic - 1/2 tsp
- Mozzarella shredded cheese - 1/4 lb
How to make zucchini casserole:
In large skillet on medium heat, saute onion. Add ground beef. Cook for 10 minutes. Spoon off fat; add garlic, tomato sauce, salt and pepper. Heat to boiling; reduce heat; simmer for 5 minutes or so. Preheat oven to 350°. Slice zucchini lengthwise 1/4-inch thick. Combine cottage cheese with egg. Use 13 x 9 x 2-inch dish. Layer zucchini on bottom. Top with cottage cheese mixture and 1/2 meat mixture. Add another layer zucchini strips. Sprinkle flour over zucchini. Put on remaining meat mixture. Top with Mozzarella cheese. Bake 40 minutes, sometimes longer if I use more meat and sauce.Recipe categories: Egg, Side dish, Casseroles.
