Ingredients/Components

  • cinnamon - 1 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • brown sugar - 1 c
  • nuts - 1/2 c
  • self-rising flour
  • raisins - 1/2 c
  • white sugar - 1 c
  • Crisco oil - 1 c
  • shredded zucchini - 2 c

How to make zucchini cake:

Mix sugars and oil; add eggs. Mix well. Add zucchini, vanilla and cinnamon. Mix flour. Bake at 325° for 1 hour in loaf pans. Roll raisins in flour. Drop on top. Freeze well.
