- sugar - 2 c
- cinnamon - 1 Tbsp
- eggs - 3 item
- vanilla - 2 tsp
- salt - 1 tsp
- flour - 2 c
- oil - 1 c
- baking powder - 1 tsp
- baking soda - 2 tsp
- raisins - 1 c
- grated unpeeled zucchini - 2 c
How to make zucchini cake:
In large bowl, combine flour, sugar, cinnamon, soda, baking powder, eggs, vanilla, salt and oil; mix well. Stir in zucchini and raisins. Pour into greased 9 x 13-inch pan and bake 50 minutes at 350°, until pick inserted in center comes out clean. When cool, cake may be cut in bars and frozen.Recipe categories: Desserts, Cakes, Squash.
