Zucchini cake

Ingredients/Components

• sugar - 2 c
• cinnamon - 1 Tbsp
• eggs - 3 item
• vanilla - 2 tsp
• salt - 1 tsp
• flour - 2 c
• oil - 1 c
• baking powder - 1 tsp
• baking soda - 2 tsp
• raisins - 1 c
• grated unpeeled zucchini - 2 c

How to make zucchini cake:

In large bowl, combine flour, sugar, cinnamon, soda, baking powder, eggs, vanilla, salt and oil; mix well. Stir in zucchini and raisins. Pour into greased 9 x 13-inch pan and bake 50 minutes at 350°, until pick inserted in center comes out clean. When cool, cake may be cut in bars and frozen.
