Ingredients/Components
- sugar
- cinnamon - 3/4 Tbsp
- eggs - 2 item
- vanilla - 1/2 tsp
- pkg
- salt - 1 tsp
- butter - 1/2 c
- oil - 3/4 c
- soda - 1/2 tsp
- baking powder - 1 tsp
- all-purpose flour
- powdered sugar - 1 c
- grated zucchini
- raisins - 3/4 c
- nuts, if desired - 1/2 c
How to make zucchini cake:
Icing:8 oz. pkg. cream cheese1/2 c. butter1 c. powdered sugar1/2 tsp. vanilla Mix zucchini, oil, eggs and sugar. Combine all dry ingredients and add to zucchini mixture. Mix well. Add nuts. Grease and flour an angel food cake pan or Bundt pan. Bake at 325° for 1 hour and 10 minutes or until done.Icing: Mix together all ingredients well. Dribble across the cake after it is done.
