Ingredients/Components

  • sugar - 3 c
  • cinnamon
  • cream cheese
  • eggs - 4 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • flour - 3 c
  • oil
  • baking powder - 2 tsp
  • baking soda - 1 tsp
  • stick butter - 1 item
  • powdered sugar
  • Cool Whip - 4 oz
  • pecans - 1 c
  • peeled and grated zucchini squash - 3 c

How to make zucchini cake:

Icing:8 oz. cream cheese1 stick butter1 1/2 c. powdered sugar2 tsp. vanilla4 oz. Cool Whip Mix all cake ingredients. Pour batter into greased and floured 10 x 14-inch pan. Bake at 325° for about 1 hour. Cool in pan 5 minutes before removing. After cooled, mix icing ingredients together and spread on cake. Refrigerate any leftover cake. Good Eating!
