Ingredients/Components

• eggs - 3 item
• sugar - 2 c
• oil - 1 c
• grated unpeeled zucchini - 2 c
• salt - 1 tsp
• soda - 2 tsp
• baking powder - 1/2 tsp
• vanilla - 3 tsp
• cinnamon - 2 tsp
• flour
• chopped nuts - 1 c
• Add the remaining ingredients
• pkg - 8 oz
• box powdered sugar - 1 item
• chopped nuts for garnish - 1 item

How to make zucchini cake:

Cream together the eggs, sugar and oil. Add the remaining ingredients. Pour into greased and floured 9 x 12-inch pan. Bake at 350° for approximately 50 minutes.Icing for Cake:3/4 stick margarine8 oz. pkg. cream cheese1 box powdered sugar2 tsp. vanilla chopped nuts for garnish Half this icing recipe is enough for the cake. Any leftover icing keeps well for some time in the refrigerator.
