- grated unpeeled zucchini - 2 c
- salt - 1 tsp
- soda - 2 tsp
- baking powder - 1/2 tsp
- vanilla - 3 tsp
- cinnamon - 2 tsp
- flour
- chopped nuts - 1 c
- Add the remaining ingredients
- pkg - 8 oz
- box powdered sugar - 1 item
- chopped nuts for garnish - 1 item
How to make zucchini cake:
Cream together the eggs, sugar and oil. Add the remaining ingredients. Pour into greased and floured 9 x 12-inch pan. Bake at 350° for approximately 50 minutes.Icing for Cake:3/4 stick margarine8 oz. pkg. cream cheese1 box powdered sugar2 tsp. vanilla chopped nuts for garnish Half this icing recipe is enough for the cake.
