Zucchini cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- cream cheese - 3 oz
- eggs - 3 item
- vanilla - 2 tsp
- salt - 1 tsp
- chopped nuts - 1 c
- flour - 2 c
- oil - 1 c
- soda - 1 tsp
- baking powder - 1/2 tsp
- powdered sugar - 2 c
- Add eggs, one at a time
- grated, peeled zucchini - 2 c
How to make zucchini cake:
Mix oil and sugar together. Add eggs, one at a time. Beat well after each addition. Add vanilla. Add sifted dry ingredients, alternating with zucchini. Fold nuts into batter. Batter will be thin. Pour into greased and floured 13 x 9-inch pan. Bake at 350° for 35 minutes. Cool and frost with Cream Cheese Icing.Icing:1 stick oleo3 oz. cream cheese2 tsp. vanilla2 c. powdered sugar Cream together oleo and cream cheese. Add vanilla and powdered sugar. Beat until creamy.
