  • sugar - 2 c
  • cinnamon - 2 tsp
  • cream cheese - 3 oz
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour - 2 c
  • oil - 1 c
  • soda - 1 tsp
  • baking powder - 1/2 tsp
  • powdered sugar - 2 c
  • Add eggs, one at a time
  • grated, peeled zucchini - 2 c

How to make zucchini cake:

Mix oil and sugar together. Add eggs, one at a time. Beat well after each addition. Add vanilla. Add sifted dry ingredients, alternating with zucchini. Fold nuts into batter. Batter will be thin. Pour into greased and floured 13 x 9-inch pan. Bake at 350° for 35 minutes. Cool and frost with Cream Cheese Icing.Icing:1 stick oleo3 oz. cream cheese2 tsp. vanilla2 c. powdered sugar Cream together oleo and cream cheese. Add vanilla and powdered sugar. Beat until creamy. Spread onto cool cake.
