Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 2 tsp
- salt - 1 tsp
- flour - 2 c
- soda - 1 tsp
- baking powder - 1/2 tsp
- cooking oil - 1 c
- chopped English walnuts - 1 c
- grated zucchini, peeled - 2 c
How to make zucchini cake:
Mix oil and sugar together; add eggs, one at a time, and beat well after each addition. Add vanilla and sifted dry ingredients alternately with zucchini. Fold in chopped nuts. (Batter will be thin.) Pour into 9 x 13-inch greased and floured pan. Bake at 350° for 55 minutes.Recipe categories: Desserts, Cakes, Squash.
