  • sugar - 2 c
  • cinnamon - 1 Tbsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour - 2 c
  • baking powder - 1 tsp
  • baking soda - 2 tsp
  • raisins - 1 c
  • salad oil - 1 c
  • grated, unpeeled zucchini - 2 c

How to make zucchini cake:

Pour into a 13 x 9-inch baking pan coated with nonstick spray or margarine and floured. Sprinkle with 1/2 cup chopped nuts for toasted effect instead of icing. Nuts inside are optional. Bake at 350° for approximately 50 minutes. Cool in pan on rack.
