Ingredients/Components

  • cinnamon
  • salt - 1/2 tsp
  • flour - 3 c
  • soda - 1 tsp
  • baking powder - 2 tsp
  • canola oil
  • grated zucchini raw - 3 c
  • granulated sugar or 2 c - 3 c
  • chopped nuts walnuts and pecans - 1 c
  • eggs or Scramblers - 4 item
  • almond or butternut flavoring - 1 tsp

How to make zucchini cake:

Sift dry ingredients together; mix sugar (NutrSweet), oil, nuts, eggs and zucchini. Put in tube or loaf pan. Bake 1 hour at 350° until done. (I used no icing, but topping could be used.)
