Zucchini cake
Ingredients/Components
- cinnamon
- salt - 1/2 tsp
- flour - 3 c
- soda - 1 tsp
- baking powder - 2 tsp
- canola oil
- grated zucchini raw - 3 c
- granulated sugar or 2 c - 3 c
- chopped nuts walnuts and pecans - 1 c
- eggs or Scramblers - 4 item
- almond or butternut flavoring - 1 tsp
How to make zucchini cake:
Sift dry ingredients together; mix sugar (NutrSweet), oil, nuts, eggs and zucchini. Put in tube or loaf pan. Bake 1 hour at 350° until done. (I used no icing, but topping could be used.)Recipe categories: Desserts, Cakes, Squash.
