Ingredients/Components
- sugar - 2 c
- cinnamon - 1 Tbsp
- eggs - 3 item
- vanilla - 1 Tbsp
- salt - 1 tsp
- chopped nuts - 1 c
- flour - 2 c
- oil - 1 c
- baking powder - 1/4 tsp
- baking soda - 2 tsp
- zucchini, loosely grated - 2 c
How to make zucchini bread:
In bowl, beat eggs until frothy. Beat in sugar, oil and vanilla until it is thick and lemon colored. Stir in loosely grated zucchini. Stir in flour (sifted with cinnamon, soda, salt and baking powder). Fold in chopped nuts. Pour mixture into three oiled and floured loaf pans.
