  • cinnamon - 1 Tbsp
  • eggs - 3 item
  • vanilla - 1 Tbsp
  • granulated sugar - 2 c
  • salt - 1 tsp
  • flour - 3 c
  • soda - 1 tsp
  • baking powder - 1 tsp
  • cooking oil - 1 c
  • nuts, chopped - 1 c
  • finely shredded zucchini - 2 c

How to make zucchini bread:

Set oven control at 350°. Grease and flour two 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans. Sift together flour, salt, soda, baking powder and cinnamon. Stir nuts into flour mixture. Set aside.

In a large mixing bowl, beat eggs until slightly foamy; add oil, sugar and vanilla. Beat until blended. Stir in the shredded zucchini. Add flour and nut mixture, stirring until just combined. Pour batter into loaf pans and bake for 50 to 60 minutes or until a toothpick comes out clean.
