Ingredients/Components
- sugar - 2 c
- cinnamon - 1 Tbsp
- eggs - 3 item
- vanilla - 1 Tbsp
- salt - 1 tsp
- chopped nuts - 1/2 c
- flour - 2 c
- oil - 1 c
- baking powder - 1/4 tsp
- baking soda - 2 tsp
- zucchini, loosely packed and coarsely grated - 2 c
How to make zucchini bread:
Beat eggs until frothy; add sugar, oil and vanilla. Beat until thick and lemon colored. Add zucchini and flour that has been sifted with the other dry ingredients. Stir well and add nuts.Pour into 2 greased and floured loaf pans. Bake at 350° for 1 hour or until pick comes out clean. Let cool 10 minutes before cutting.
