Zucchini bread
Ingredients/Components
- sugar - 2 c
- cinnamon - 3 tsp
- eggs - 3 item
- vanilla - 2 tsp
- salt - 1 tsp
- chopped nuts - 1/2 c
- coconut - 1/2 c
- soda - 1 tsp
- baking powder - 1/4 tsp
- all-purpose flour - 3 c
- grated zucchini - 2 c
- raisins - 1 c
- Wesson oil - 1 c
How to make zucchini bread:
Cream oil and sugar; add eggs one at a time and beat well after each addition. Add grated zucchini. Sift together 3 times the flour, cinnamon, salt, soda and baking powder. Add to egg mixture. Fold in chopped nuts, coconut, raisins and vanilla. Bake in 2 well-greased and floured loaf pans for 1 1/2 hours at 325°. Serves about 16.Recipe categories: Breads, Quick breads, Sweet.
