Ingredients/Components

  • sugar - 2 c
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • vegetable oil - 1 c
  • large eggs - 3 item
  • sifted all-purpose flour
  • ground cinnamon - 1 Tbsp
  • ground ginger - 1/2 tsp
  • shredded unpeeled zucchini - 3 c
  • walnuts, ground - 1 c

How to make zucchini bread:

Preheat oven to 325°. Grease two 8 x 4-inch loaf pans generously with shortening. Line the bottom of pans with waxed paper and grease that.

Combine all ingredients, except the flour, zucchini and walnuts, in large bowl of electric mixer. Beat for about 2 minutes until blended. Fold in flour until blended, then fold in zucchini and walnuts.

Divide mixture evenly between two pans. Bake at 325° for 1 hour and 15 minutes.
