Ingredients/Components

  • sugar - 3 c
  • cinnamon - 1 Tbsp
  • eggs - 3 item
  • vanilla - 1 Tbsp
  • salt - 1 tsp
  • flour - 3 c
  • baking powder - 1/4 tsp
  • baking soda - 1 tsp
  • Wesson oil - 1 c
  • diced zucchini - 2 c

How to make zucchini bread:

Mix first 5 ingredients in blender. Pour blended mixture into mixing bowl and add remaining ingredients. Nuts or raisins may be added. Pour into 2 greased loaf pans. Sprinkle tops with sugar and cinnamon mixture. Bake at 350° for 60 minutes. Freezes well.
