  • sugar - 2 c
  • cinnamon - 2 Tbsp
  • vanilla extract - 1 Tbsp
  • salt - 1 tsp
  • flour - 3 c
  • eggs, beaten - 3 item
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • vegetable oil - 1 c
  • chopped walnuts - 1 c
  • raisins - 1 c
  • medium zucchini - 2 item

How to make zucchini bread:

Shred zucchini to measure 2 cups; set aside. Cream sugar and oil. Add eggs, zucchini and vanilla; mix well. Combine flour, cinnamon, salt, baking soda and baking powder; mix well. Add raisins and nuts to dry ingredients. Combine with zucchini mixture; mix well. Pour into 2 greased and floured 9 x 5-inch loaf pans. Bake at 350° for 1 hour, or until tests done. Let stand 10 minutes. Turn out on wire rack to cool. Makes 2 loaves.
