Zucchini bread
Ingredients/Components
- sugar - 2 c
- cinnamon - 2 Tbsp
- vanilla extract - 1 Tbsp
- salt - 1 tsp
- flour - 3 c
- eggs, beaten - 3 item
- baking powder - 1 tsp
- baking soda - 1 tsp
- vegetable oil - 1 c
- chopped walnuts - 1 c
- raisins - 1 c
- medium zucchini - 2 item
How to make zucchini bread:
Shred zucchini to measure 2 cups; set aside. Cream sugar and oil. Add eggs, zucchini and vanilla; mix well. Combine flour, cinnamon, salt, baking soda and baking powder; mix well. Add raisins and nuts to dry ingredients. Combine with zucchini mixture; mix well. Pour into 2 greased and floured 9 x 5-inch loaf pans. Bake at 350° for 1 hour, or until tests done. Let stand 10 minutes. Turn out on wire rack to cool. Makes 2 loaves.Recipe categories: Breads, Quick breads, Sweet.
