Ingredients/Components
- sugar - 2 c
- cinnamon - 3 tsp
- eggs - 3 item
- vanilla - 3 tsp
- salt - 1 tsp
- flour - 3 c
- oil - 1 c
- baking powder - 1/4 tsp
- baking soda - 1 tsp
- chopped walnuts - 1 c
- grated, peeled zucchini - 2 c
How to make zucchini bread:
Beat eggs; add sugar, oil, zucchini and vanilla. Mix well. Combine flour, salt, baking soda, baking powder and cinnamon. Add to the zucchini and egg mixture. Stir in nuts.Pour into two 9 x 5-inch greased and floured pans or 5 aluminum tins. Bake larger loaves at 350° for 1 hour and the smaller loaves at 350° for 45 minutes. Loaves freeze well and make a great gift.
