Zucchini bread

Ingredients/Components

• sugar - 2 c
• cinnamon - 1 tsp
• eggs - 3 item
• vanilla - 1 Tbsp
• salt - 1 tsp
• soda - 1/4 tsp
• baking powder - 1/4 tsp
• vegetable oil - 1 c
• all-purpose flour - 2 c
• nuts - 1 c
• grated zucchini - 2 c
• grated lemon rind - 1 tsp

How to make zucchini bread:

Beat eggs until light; add sugar, oil and vanilla, mixing until thick. Add zucchini and stir. Sift flour and other dry ingredients. Add to other mixture, stirring well. Add nuts and lemon rind. Bake in greased cake pans or Bundt cake pan. Bake about 1 hour at 350°.
