  • sugar - 2 c
  • cinnamon - 3 tsp
  • eggs - 2 item
  • vanilla - 1 Tbsp
  • salt - 1 tsp
  • flour - 3 c
  • soda - 1 tsp
  • baking powder - 1/2 tsp
  • vegetable oil - 1 c
  • chopped nuts optional - 1 c
  • raisins or dates optional - 1 c
  • peeled and grated squash - 2 c

How to make zucchini bread:

Mix beaten eggs and sugar. Add squash, oil and vanilla. Sift flour, soda, baking powder, salt and cinnamon. Add and mix well. Stir in nuts and raisins or dates (optional). Bake at 250° until done.
