  • cinnamon - 1 Tbsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • chopped pecans - 2 Tbsp
  • granulated sugar - 2 c
  • milk - 2 Tbsp
  • salt - 1 tsp
  • baking powder - 1/4 tsp
  • baking soda - 1 tsp
  • all-purpose flour - 3 c
  • chopped walnuts - 1/2 1
  • salad oil - 1 c
  • maraschino cherries, chopped - 1/4 c
  • drained crushed pineapple - 1/4 c
  • grated peeled or unpeeled raw zucchini - 2 c
  • Add oil and sugar and mix well by hand

How to make zucchini bread:

Beat eggs until light and foamy. Add oil and sugar and mix well by hand. Add zucchini and vanilla. Sift together dry ingredients and add to batter. Stir in nuts.

Pour batter into 2 greased 9 x 5 x 3-inch loaf pans and bake for 1 hour at 350°. Test for doneness with toothpick. Cool in pans on rack for 10 minutes, then remove bread from pans and cool completely. This freezes well.Pineapple Cream Cheese Filling For Zucchini Bread*:1 (6 oz.) pkg. cream cheese1/4 c. drained crushed pineapple2 Tbsp. chopped pecans1/4 c. maraschino cherries, chopped1/4 tsp. salt2 Tbsp. milk Soften cream cheese with milk and other ingredients. Spread between slices of zucchini bread for great party sandwiches. Makes 1 cup.
