  • sugar - 2 c
  • cinnamon - 3 tsp
  • vanilla - 3 tsp
  • salt - 1 tsp
  • flour - 2 c
  • oil - 1 c
  • soda - 1/2 tsp
  • eggs, beaten - 3 item
  • baking powder - 1 tsp
  • nuts, chopped - 1 c
  • zucchini, peeled and grated - 2 c

How to make zucchini bread:

Add beaten eggs, sugar and oil together. Sift flour, salt, soda, cinnamon and baking powder; add to egg mixture and blend well. Add vanilla, nuts and zucchini. Pour into a greased loaf pan. Bake at 350° for 1 hour, or until tests done.
