Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 1 Tbsp
- salt - 1 tsp
- flour - 3 c
- baking soda - 1 tsp
- vegetable oil - 1 c
- grated zucchini, unpeeled - 2 c
- chopped nuts or raisins - 1 c
How to make zucchini bread:
Beat eggs until frothy. Add sugar, vegetable oil and vanilla. Beat mixture until thick and lemon colored. Stir in grated zucchini. Add flour, cinnamon, baking soda and salt. Fold in nuts or raisins. Bake 1 hour at 350° in 2 well-greased and floured loaf pans. Cool in pans for 10 minutes, then remove.Recipe categories: Breads, Quick breads, Sweet.
