Ingredients/Components
- sugar - 2 c
- cinnamon - 3 tsp
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1 tsp
- chopped nuts - 1/2 1
- flour - 3 c
- baking powder - 1/2 tsp
- baking soda - 1/2 tsp
- vegetable oil - 1 c
- grated peel zucchini - 2 c
How to make zucchini bread:
Measure and stir dry ingredients into mixing bowl. Blend eggs, oil, sugar and vanilla in blender and add to other ingredients. Grate zucchini in blender a small amount at a time. (Put in with water and drain in sieve.) Put in bowl with dry ingredients; mix well. Pour into greased and floured 2 pound coffee can, shortening can or 2-quart mold. Place can in crock-pot. Cover with 8 paper towels. Cover and bake on high 3 to 4 hours or more. Can bake at 350° for 50 to 60 minutes.Recipe categories: Breads, Quick breads, Sweet.
