Ingredients/Components

  • sugar - 2 c
  • cinnamon - 3 tsp
  • eggs - 3 item
  • vanilla - 3 tsp
  • salt - 1 tsp
  • baking soda - 1 tsp
  • grated zucchini - 2 c
  • flour, sifted - 3 c
  • Crisco oil - 1 c
  • nuts and raisins if desired - 1/2 c

How to make zucchini bread:

Sift together the first five ingredients. Add Crisco oil, eggs, vanilla and grated zucchini. May add nuts and raisins, if desired. Mix ingredients. Preheat oven to 350°.

Bake in greased and floured pans (I spray mine with Pam only) at 350° for 1 hour. Makes 2 loaves.
