Ingredients/Components

  • sugar - 2 c
  • eggs - 3 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • vegetable oil - 1 c
  • unsifted flour - 3 c
  • ground nuts optional - 1 c
  • ground cinnamon - 1 Tbsp
  • ground ginger - 1/2 tsp
  • shredded, unpared zucchini - 3 c

How to make zucchini bread:

Grease loaf pans and line bottoms with waxed paper. Use 2 regular pans (9 5/8 x 5 1/2 x 2 3/4-inch) or 6 mini pans (5 1/2 x 3 x 2 1/4-inch).

Measure all ingredients except flour, zucchini and nuts into large mixer bowl. Beat 1/2 minute on low speed, scraping bowl. Beat on medium speed 1 minute until smooth. Scrape bowl while beating. Stir in flour and zucchini by the cup, alternating until all is mixed in. Stir in nuts. Pour into pans.

Bake at 325° (small pans) 50 minutes or large pans for 1 hour and 5 minutes or until toothpick comes out clean.
