Zucchini bread
Ingredients/Components
- sugar - 2 c
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- baking powder - 1 tsp
- baking soda - 1 tsp
- vegetable oil - 1 c
- unsifted flour - 3 c
- ground nuts optional - 1 c
- ground cinnamon - 1 Tbsp
- ground ginger - 1/2 tsp
- shredded, unpared zucchini - 3 c
How to make zucchini bread:
Grease loaf pans and line bottoms with waxed paper. Use 2 regular pans (9 5/8 x 5 1/2 x 2 3/4-inch) or 6 mini pans (5 1/2 x 3 x 2 1/4-inch).Measure all ingredients except flour, zucchini and nuts into large mixer bowl. Beat 1/2 minute on low speed, scraping bowl. Beat on medium speed 1 minute until smooth. Scrape bowl while beating. Stir in flour and zucchini by the cup, alternating until all is mixed in. Stir in nuts. Pour into pans.
Bake at 325° (small pans) 50 minutes or large pans for 1 hour and 5 minutes or until toothpick comes out clean.
