Zucchini bread
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 1 Tbsp
- salt - 1 tsp
- flour - 3 c
- baking powder - 1/4 tsp
- baking soda - 1 tsp
- vegetable oil - 1 c
- finely chopped pecans optional - 1 c
- grated zucchini, peeled and seeds removed - 2 c
- grated lemon rind or 1 tsp - 1 tsp
How to make zucchini bread:
Beat eggs until light and frothy. Add sugar, oil and vanilla. Mix until thick. Add zucchini. Mix. Add remaining ingredients. Mix until smooth. Bake in 2 greased and floured loaf pans at 350° for 1 hour. Freezes well.Recipe categories: Breads, Quick breads, Sweet.
