Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 3 item
  • vanilla - 1 Tbsp
  • salt - 1 tsp
  • flour - 3 c
  • baking powder - 1/4 tsp
  • baking soda - 1 tsp
  • vegetable oil - 1 c
  • finely chopped pecans optional - 1 c
  • grated zucchini, peeled and seeds removed - 2 c
  • grated lemon rind or 1 tsp - 1 tsp

How to make zucchini bread:

Beat eggs until light and frothy. Add sugar, oil and vanilla. Mix until thick. Add zucchini. Mix. Add remaining ingredients. Mix until smooth. Bake in 2 greased and floured loaf pans at 350° for 1 hour. Freezes well.
