Ingredients/Components

  • eggs - 3 item
  • sugar - 2 c
  • oil - 1 c
  • vanilla - 1 tsp
  • cinnamon - 1 tsp
  • salt - 1 tsp
  • soda - 1 tsp
  • baking powder - 1/4 tsp
  • grated zucchini - 2 c
  • sifted flour - 3 c
  • chopped nuts - 1 c

How to make zucchini bread:

Beat eggs until foamy. Add sugar, oil and vanilla; beat well. Sift dry ingredients together. Add zucchini, dry ingredients and nuts to mixture. Pour into greased and floured pans (1 tube pan or 2 loaf pans). Bake at 350° for 1 hour or until toothpick comes out clean.

Note: I use four 7 x 3 1/2-inch pans and bake about 45 minutes, or until toothpick comes out clean.
