Zucchini bread
Ingredients/Components
- eggs - 3 item
- sugar - 2 c
- oil - 1 c
- vanilla - 1 tsp
- cinnamon - 1 tsp
- salt - 1 tsp
- soda - 1 tsp
- baking powder - 1/4 tsp
- grated zucchini - 2 c
- sifted flour - 3 c
- chopped nuts - 1 c
How to make zucchini bread:
Beat eggs until foamy. Add sugar, oil and vanilla; beat well. Sift dry ingredients together. Add zucchini, dry ingredients and nuts to mixture. Pour into greased and floured pans (1 tube pan or 2 loaf pans). Bake at 350° for 1 hour or until toothpick comes out clean.Note: I use four 7 x 3 1/2-inch pans and bake about 45 minutes, or until toothpick comes out clean.
