Zucchini bars



  • sugar - 2 c
  • eggs - 3 item
  • vanilla - 2 tsp
  • pkg
  • milk - 1 Tbsp
  • salt - 1 tsp
  • confectioners sugar
  • chopped dates - 3/4 c
  • baking powder - 1/2 tsp
  • vegetable oil - 2/3 c
  • chopped walnuts - 1/2 c
  • grated zucchini - 2 c

How to make zucchini bars:

Icing:1 (3 oz.) pkg. cream cheese2 1/2 c. confectioners sugar1 tsp. vanilla1 Tbsp. milk Beat together eggs, vegetable oil, sugar and vanilla. Sift together flour, baking soda, salt and baking powder. Mix into egg mixture. Blend in dates, zucchini and nuts. Place onto greased and floured 15 x 10 x 1-inch jelly roll pan. Bake at 350° for about 30 minutes.

Icing: Beat cream cheese until fluffy. Blend in sugar, vanilla and milk. Add a little more milk if necessary to reach spreading consistency. Spread over cooled bars.
