Zucchini bars
Ingredients/Components
- sugar - 1/2 c
- eggs - 2 item
- vanilla - 1 tsp
- milk - 1/4 c
- salt - 1 tsp
- flour - 3 c
- brown sugar - 1 c
- nutmeg - 1/2 tsp
- baking powder
- powdered sugar - 1 1
- chopped walnuts - 1/2 c
- margarine - 3/4 c
- cloves - 1/2 tsp
- zucchini - 2 c
- butterscotch chips or raisins - 1/2 c
- Cream together remaining ingredients
How to make zucchini bars:
Sift together dry ingredients. Cream together remaining ingredients. Combine both mixtures. Gradually add 2 cups peeled and grated zucchini, 1/2 cup chopped walnuts and 1/2 cup butterscotch chips or raisins. Pour into greased and floured 10 x 15-inch pan. Bake at 375° for 20 to 25 minutes. Frost with Caramel Frosting if desired.Caramel Frosting:1/2 c. margarine1 c. brown sugar1/4 c. milk1 to 1 1/2 c. powdered sugar Melt margarine; add brown sugar and boil for 2 minutes. Add milk and bring to second boil. Remove from heat and add enough powdered sugar to spread.In memory of Loraine Fathergill.
