  • thinly sliced, unpeeled zucchini 4 small - 3 c
  • Bisquick baking mix - 1 c
  • finely chopped onion - 1/2 c
  • grated Parmesan - 1/2 c
  • snipped parsley - 2 Tbsp
  • salt - 1/2 tsp
  • seasoned salt - 1/2 tsp
  • dried marjoram or oregano leaves - 1/2 tsp
  • dash of pepper - 1 item
  • clove garlic, finely chopped - 1 item
  • vegetable oil - 1/2 c
  • eggs, slightly beaten - 4 item

How to make zucchini appetizers:

Heat oven to 350°. Grease oblong pan (13 x 9 x 2-inch). Mix all ingredients; spread in pan. Bake until golden brown (about 25 minutes, depending on oven). Cut in 2 x 1-inch squares. Makes 4 dozen. Can be frozen. Reheat in oven, not microwave.
