Ingredients/Components
- large zucchini - 1 item
- olive oil - 2 Tbsp
- butter - 1/4 c
- heavy cream - 3/4 c
- clove garlic, crushed - 1 item
- Parmesan cheese - 1 item
- fresh parsley, chopped - 1 item
- salt and pepper to taste - 1 item
How to make zucchini alfredo:
Using a potato or vegetable peeler, peel a large zucchini, then cut in half; scoop out the seeds. Using the peeler, continue cutting the zucchini in ribbons, then saut?© in olive oil and your choice of seasonings.Alfredo Sauce: Melt butter. Add heavy cream and garlic. Whisk in Parmesan cheese and melt thoroughly. Add parsley, salt and pepper to taste.
