Ingredients/Components

  • large zucchini - 1 item
  • olive oil - 2 Tbsp
  • butter - 1/4 c
  • heavy cream - 3/4 c
  • clove garlic, crushed - 1 item
  • Parmesan cheese - 1 item
  • fresh parsley, chopped - 1 item
  • salt and pepper to taste - 1 item

How to make zucchini alfredo:

Using a potato or vegetable peeler, peel a large zucchini, then cut in half; scoop out the seeds. Using the peeler, continue cutting the zucchini in ribbons, then saut?© in olive oil and your choice of seasonings.

Alfredo Sauce: Melt butter. Add heavy cream and garlic. Whisk in Parmesan cheese and melt thoroughly. Add parsley, salt and pepper to taste.
